Wholesome Loaf Cake

Some like to call it bread, but I like to call it cake...or loaf cake. This is a really healthy loaf, suitable for diabetics or those who like traditional low sugar loaf cake. This dairy-free cake is made in 100% canola oil, packed with carrots, walnuts, banana, zucchini and oatmeal. I personally love the texture of the cake, it's moist and not dry.

This is indeed a fragrant cake, with loads of peaches and combined well with almonds. We made two cakes for Isaac's 2nd birthday party and according to 'Mommy', he adore fishes and animals. The two lovely cakes are chocolate fudge cake, covered in luscious chocolate ganache. I am glad everyone loved the cake decorations and the cake itself!
